Ingredients
1 ½ cup flour
1 tsp salt
1 tsp baking soda
1 ½ cup granulated sugar
3 eggs
15 oz whole milk ricotta cheese
¾ cup olive oil
1 tbsp whole milk
1 tsp vanilla extract
1 tbsp lemon zest
½ cup fresh lemon juice

Directions
Step 1
Preheat the oven to 350 degrees.
Step 2
In a medium sized bowl, combine flour, salt, and baking soda. Set aside.

In a stand mixer, beat sugar and eggs until light and fluffy - about 5 minutes.

Add in ricotta, olive oil, whole milk, vanilla extract, lemon zest, and lemon juice. Continue to mix for another 2-3 minutes.

Slowly add in flour mixture but be sure not to over mix.
Step 6
Pour mixture into a greased springform pan and bake for 50 minutes or until a toothpick is inserted in the middle and comes out clean.
Step 7
Let rest for 5 minutes then remove the sides of the pan and let cool completely.
Step 8
Dust the top of the cake with powdered sugar.
