Ingredients
8 oz mozzarella pearls
1 cup flour
3 eggs
2 cup bread crumbs
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tbsp oregano
48 oz vegetable oil
½ cup mayonnaise
2 tbsp pesto
cup marinara

Step 1
Add mayonnaise to a small bowl and whisk in pesto. Cover and set aside.

Add oil to a frying pan and heat to 375 degrees.

Add flour to a medium sized bowl and mix in ½ tsp salt, ½ tsp pepper, ½ tsp garlic powder, ½ tsp onion powder, and ½ tbsp oregano. In another medium sized bowl, add eggs and whisk well. In another medium sized bowl, add bread crumbs and mix in the rest of the seasoning, ½ tsp salt, ½ tsp pepper, ½ tsp garlic powder, ½ tsp onion powder, and ½ tbsp oregano.

Using a toothpick, dip each mozzarella ball into the flour mixture, then egg, then breadcrumb mixture. Double coat the mozzarella ball by dipping it in the egg again and the breadcrumb mixture again.

Working in small batches, drop breaded mozzarella balls into the oil. It should only take a few seconds to fry them. Place on a baking sheet lined with paper towels to soak up excess oil. Sprinkle with salt and serve with pesto aioli and marinara.
