Ingredients
18 oz pearl couscous
⅓ cup cherry tomatoes, diced
⅓ cup yellow bell pepper, diced
½ cup english cucumber, diced
¼ cup fresh parsley, chopped
¼ cup red onion, diced
¼ cup kalamata olives, diced
1 cup italian dressing
1 tsp basil
1 tsp oregano
1 tsp salt
1 tsp pepper
⅓ cup carrot
½ cup feta
Directions
Step 1
Bring a pot of water to a boil and add couscous. Cook for 1 minute less than al dente. Strain and rinse with cold water to prevent further cooking.

Add the couscous, vegetables, feta, dressing, and spices in a large bowl and gently mix until combined. Cover with plastic wrap and place in the fridge for at least one hour.
