It’s a rainy, lazy Sunday and I’m committed to chillin on the couch today. 👏🏻 HOWEVER. I started craving donuts…. 🍩 And if you know me I’m not going out to buy donuts, I’m MAKING donuts! But I also didn’t want to put in all the effort of rolling out dough and waiting on fermentation, so I went for these quick DONUT HOLEZZZZZ ❤️‍🔥 These have sourdough starter discard in them, but you can easily sub some extra flour and water for that to make up for it. I fried mine in animal fat (specifically tallow and camel hump), but you can totally fry these in whatever oil you have on hand. They come together quickly and will curb any donut craving you have! Adapted from a recipe by Angela Lynne

Ingredients

Animal fat or other oil for frying
60 g discarded sourdough starter
1 egg room temp
1/2 cup ricotta cheese room temp
1/2 tsp vanilla bean paste or vanilla extract
2 tbsp maple syrup
60 g all purpose flour
1 tsp baking powder
1 pinch salt
Jelly for center
Powdered sugar for garnish

Directions

1.
Heat oil in a medium sized pot so that you have at least 2 in of oil.
Animal fat or other oil for frying

To a large bowl, add starter, egg, ricotta, vanilla, and maple syrup. Mixie mix to combine.
60 g discarded sourdough starter
1 egg room temp
1/2 cup ricotta cheese room temp
1/2 tsp vanilla bean paste or vanilla extract
2 tbsp maple syrup

Add in flour, baking powder, salt, and mixie mix once again until a smooth batter forms.
60 g all purpose flour
1 tsp baking powder
1 pinch salt

Use a 2 1/2 tbsp cookie scoop (or a big ol tablespoon and hefty scoops) to scoop out batter. You want to fill 1/2 or 3/4 of the cookie scoop with batter, add 1/4 - 1/2 tsp jelly, then cover that with more batter.
Jelly for center

Plot batter into oil and fry for about 2-4 minutes on each side. You want golden and crispyyyy!!

Sprinkle and dust with powdered sugar annnndddd
Powdered sugar for garnish
