Ingredients

1 pie crust

12 eggs

1 cup half and half

½ cup crumbled feta cheese

½ cup mexican shredded cheese

1 red bell pepper

1 yellow bell pepper

8 in grape tomatoes, cut half

2 - 3 tbsp chopped fresh dill

1 - 2 tbsp chopped green onions

Directions

Step 1

Preheat your oven to 400 degrees.

Step 2

Unroll the pie crust into the pie dish and trim.

Step 3

In a large glass bowl, whisk the eggs then add the half and half, salt and pepper.

Step 4

Pour the eggs into the raw crust then add the cheeses, peppers, tomatoes, scallions and herbs.

Step 5

Bake for 45-55 minutes or until the eggs are set.

Step 6

Let this amazing eggy creation cool down before going to town! Will keep in the fridge for up to a week for a major husband leftover's situation!
