Ingredients
1 (7 to 8 ounce) block feta cheese
1 bunch small tomatoes on the vine
12 grape tomatoes, halved
1 shallot, sliced
4 oz white mushrooms, sliced
1 cloves or 2 garlic, minced
2 scallions, chopped
2 tablespoons chopped fresh cilantro
2 tablespoons olive oil
1 package rosemary flatbread crackers
1 french baguette warmed
Directions
Step 1
Preheat the oven to 400°F
Step 2
Put the feta block in the center of a ceramic baking dish. Top and surround with the tomatoes on the vine, grape tomatoes, mushrooms, shallot, garlic, scallions, cilantro, and plenty of olive oil.
Step 3
Bake for 15 minutes, or until the tomatoes are slightly browned and wilted.
Step 4
Serve with crostini or flatbread crackers
