Roasted Cauliflower Taco Salad

Spicy and flavorful this delish taco salad is packed with roasted cauliflower tossed with taco seasoning and a yummy dressing perfect for a weeknight dinner. Feel free to sub taco meat or seasoned chicken.

Ingredients

2 - 3 cups of Spring salad greens

2 - 3 cups of roasted cauliflower, seasoned with taco seasoning

¼ red onion, sliced very thin

4 oz cubed Spicy Chipotle Cheddar cheese

8 - 10 grape tomatoes, cut in half

1 avocado, sliced

Tortilla strips

2 - 3 tablespoons chopped cilantro

Drizzle of Durant fuzed Lemon olive oil

¼ cup sour cream

¼ cup mayo

1 - 2 tablespoons hot sauce I like Cholula or Tapatio

¼ cup salsa

1 Squeeze of lemon or lime

1 tsp taco seasoning

Directions

Step 1

Clean and prepare the cauliflower for roasting. Cut it into small pieces and toss onto a baking sheet with olive oil, taco seasoning and bake at 425 for about 20 minutes

Step 2

Prepare the Taco Salad Dressing by combining the sour cream, mayo, hot sauce, salsa, lemon juice, and taco seasoning and stir until creamy. Set aside.

Step 3

Lay down a nice bed of greens on a medium-large sized platter and drizzle with a bit of the lemon olive oil

Step 4

Cube the cheese and toss onto the salad

Step 5

Cut the tomatoes and onions and toss onto the salad along with the tortilla strips

Step 6

Remove the cauliflower from the oven and let cool slightly then place on the top of the salad

Step 7

Drizzle with the dressing, cilantro, avocado and any other yummy taco salad toppings you enjoy!
