Ingredients
8 oz cream cheese, cubed
8 oz Smoky jalapeño Colby Jack cheese, cubed
8 oz Mexican Shredded cheese
1 can Original @roteltomatoes
½ cup half and half
1 can small sliced black olives
½ yellow bell pepper, diced
½ cup cooked corn
3 ½ tbsp chopped cilantro
¼ cup your favorite salsa (I used my sister Rita’s homemade version she uses a crazy mix of roasted veggies and a few secret ingredients 🤤)
1 lb cooked ground beef seasoned with taco seasonings ( I used the @traderjoes Meatless crumbles)

Directions
Step 1
1. Preheat your oven to 400 degrees.
Step 2
2. Combine all the ingredients into a baking dish reserving half the shredded cheese for topping later. Cover with foil.

3. Bake for 25-35 minutes. Remove from oven, remove foil.
Step 4
4. Stir until the entire thing is all dreamy and creamy then top with the rest of your shredded cheese

5. Turn the oven to broil and place the dip back in to melt until bubbly

6. Serve with crostini or tortilla chips and veggies!
