Ingredients

1 package puff pastry or 2 sheets

10 ounces French garlic and

fine herb cheese

Splash of milk or water

3 or 4 fresh basil leaves, finely chopped

Salt and freshly ground black pepper

to taste

1 cup bite size cauliflower pieces

10 asparagus spears,

cleaned and trimmed

2 tablespoons olive oil

1 avocado, peeled and cubed

6 grape tomatoes, halved

1⁄2 red onion, thinly sliced

4 or 5 black olives, halved

cup 1⁄4 shredded Parmesan cheese

2 tablespoons thinly sliced scallions

Directions

Step 1

Preheat the oven to 375°F, or the temperature indicated on the puff pastry instructions.

Step 2

Spread the pastry onto a baking sheet lined with parchment paper, stretching it to ensure a nice even crust. Bake according to package instructions. Set aside.

Step 3

In a microwavable bowl, soften the French cheese in the microwave for 30 seconds. Mix in a splash of milk or water until a creamy mixture is formed. Add the basil and salt and pepper. Set aside.

Step 4

Preheat the broiler.

Step 5

Toss the cauliflower and asparagus in olive oil, salt, and pepper. Put together on a baking sheet or on separate sheets. Roast for 10 minutes, then remove the asparagus.

Step 6

Allow the cauliflower to roast an additional 10 to 15 minutes.

Step 7

Spread the French cheese mixture over the cooked pastry as a sauce. Top with the roasted cauliflower and asparagus along with the avocado, grape tomatoes, red onion, black olives, Parmesan cheese, and scallions.

Step 8

Place on a large cutting board, cut into squares to serve immediately.
