An easy weeknight dinner using a few key Greek-inspired ingredients you can make yourself or use pre-made versions from Trader Joe's or your local favorite restaurant. Ingredients

4 Large flatbreads

12 oz gyro meat, sliced thin

1 avocado, sliced thin

1 cup arugula

2 cups mozzarella cheese, shredded

8 - 10 grape tomatoes

1 - 2 small avocadoes

Green Goddess dressing

Tools

Baking Sheet

Parchment if needed

Large knife or pizza cutter

Directions

Step 1

Preheat your oven to 450 degrees.

Step 2

Assemble your flatbreads by placing them on baking sheets - two per sheet works well with this size flatbreads from Trader Joes

Step 3

Add a layer of cheese on the bread then add the meat, arugula, tomatoes, salt and pepper.

Step 4

Bake the flatbreads for 15 minutes or until lightly crispy then drizzle on the green goddess sauce. Cut into squares and serve right away.
