These super easy weeknight crispy tacos are super versatile. I like to use the shells from Trader Joe's but feel free to use any you like. Imagine making these ahead of time for a big party then popping them in the oven throughout the party to enjoy warm tacos well into the night!

Ingredients

12 yellow corn hard tortilla shells

1 lb ground beef or beefless crumbles

2 T oil

1 packet Taco seasoning or use a combo of chili powder, garlic powder, onion powder, salt and pepper

Mexican Shredded Cheese

2 cups baby arugula

Tools

sheet Mini pan

Parchment (optional)

Directions

Step 1

Preheat your oven to 400 degrees.

Step 2

In a pan on the stove over medium-heat, add the oil, onion, and ground meat. Sauté until cooked through then add the taco seasonings and 1/3 cup water.

Step 3

Stuff the hard shells with meat then cheese and line them up on the baking sheet.

Step 4

Bake at 400 for 12-15 minutes or until the cheese is bubbly and the shells are nice and crispy.

Step 5

Remove the tacos from the oven and top with arugula and sauce and toppings like you.
