Ingredients

24 slices of salami I used Calabrese

4 oz crumbled feta cheese

1 avocado, diced

¼ orange bell pepper

10 - 12 grape tomatoes sliced in quarters

Chopped fresh basil

Sea Salt

Pepper

Balsamic glaze

Scallions

Tools

Muffin tin

Directions

Step 1

Preheat your oven to 400 degrees

Step 2

Place your salami slices in a muffin tin to create a little cup while.

Step 3

Bake in the oven for 10 minutes or until nice and crispy and set on paper towels or a rack to cool down

Step 4

In a medium sized bowl, combine the crumbled feta, diced avocado, bell pepper, tomatoes, chopped basil, salt and pepper.

Step 5

Scoop the feta salad into the salami cups and top with a little drizzle of the balsamic glaze, fresh basil and a bit of sea salt if you like!
