Ingredients
12 eggs
1 cup milk or half and half
½ cup of shredded or cubed cheddar cheese
¼ cup shredded parmesan cheese
½ cup cubed or shredded manchego cheese
1 Pie crust
1 tbsp Butter
2 cups cooked broccoli
12 sage leaves
1 cup of olive oil for frying the sage leaves
2 scallions, chopped

Pepper
Directions
Step 1
Preheat your oven to 400 degrees
Step 2
Butter your ceramic baking dish and place the raw pie crust inside. Poke holes in it with a fork.
Step 3
In a large glass bowl, crack the 12 eggs and whisk. Add the milk, salt and pepper.
Step 4
Pour the egg mixture into the dish with the pie crust.
Step 5
Toss the broccoli with a bit of olive oil, salt and pepper then toss into the egg mixture.
Step 6
Top with the cheeses and add more salt and pepper.
Step 7
Bake at 400 degrees for about 40-50 minutes or until the eggs are set and not wiggly anymore.
Step 8
On the stove, heat the cup of olive oil in a small saucepan over medium heat. Add the fresh sage leaves and fry for about 1 minutes.
Step 9
Set the sage leaves on a dry paper towel and sprinkle with salt.
Step 10
Top the quiche with the crispy sage leaves and serve right away or save for later! Quiche is great heated up for leftovers too!
