Ingredients

6 1⁄2 ounces vegan cashew cheese

6 1⁄2 ounces plain goat cheese

2 red radishes, sliced

1 purple radish, sliced

1 cup cauliflower florets

1⁄2 cup canned chickpeas,

rinsed and drained

1 cup white mushrooms, sliced

2 –3 tablespoons chopped fresh cilantro

2 teaspoons everything but the bagel

seasoning

1 –2 tablespoons olive oil

pinch of red pepper flakes

Salt and freshly ground black pepper

to taste

10 –12 fruit and nut crackers

10 –12 Italian breadsticks

Directions

Step 1

Preheat the oven to 400°F.

Step 2

Place the cashew cheese and goat cheese in the baking dish. Surround the cheeses with the radishes, cauliflower, chickpeas, olives, mushrooms, and cilantro, keeping the cheeses separated.

Step 3

Top the goat cheese with the everything-but-the-bagel seasoning and the whole dish the olive oil, red pepper flakes, and salt and pepper.

Step 4

Bake for 15 to 20 minutes, or until the vegetables are soft and slightly browned.

Step 5

Serve with the crackers and breadsticks.
