Ingredients
6 Medium Heirloom Tomatoes
4 slices Bacon, chopped
1 Medium Onion
1 tbsp Flour
½ cup Chicken Stock
Salt and Pepper to Taste
Directions
Step 1
Dice your tomatoes and add to a medium sized skillet set over medium heat.
Step 2
Simmer the tomatoes and stir occasionally.
Step 3
In a separate pan, add the bacon and cook until mostly cooked. Add flour and absorb all the grease into the flour. Add the broth, and whisk until the flour, bacon, and broth are incorporated and smooth.
Step 4
Pour the flour/broth mixture into your tomatoes, whisking until it's combined completely.
Step 5
Bring the tomato gravy to a boil. Immediately reduce the heat and let the mixture simmer for 10 minutes. The gravy should thicken.
Step 6
If you prefer the gravy to be more smooth, use an immersion blender to chopped up the tomatoes further.
Step 7
Add salt and pepper to taste. Serve hot over fluffy white rice.
