Stuffed French Toast

Ingredients

eggs

1 cup milk

1 cup coffee creamer

½ tsp cinnamon

1 tsp cinnamon sugar

dash of nutmeg

1 tbs vanilla extract

1 inch loaf challah or brioche bread, sliced

8 oz cream cheese, softened

3 tbs unsalted butter, melted

½ cup powder sugar

1 tsp vanilla extract

Directions

Step 1

In a small bowl, mix together the cream cheese, powdered sugar, melted butter and vanilla extract until smooth.

Step 2

Slice loaf of bread into thick slices & then simply slice a small pocket in the middle of each slice . Use your finger to enlarge the inside of the pocket creating room for the cream cheese mixture.

Step 3

Stuff the insides of the pockets with the cream cheese mixture, with a piping bag or a spoon.

Step 4

In a shallow dish, whisk together the eggs, milk, coffee creamer, cinnamon, cinnamon sugar, nutmeg, and vanilla. Dip the stuffed bread into the egg mixture, allowing each side to sit for a few seconds in the egg mixture.

Step 5

When ready to cook the French Toast. Heat a large skillet or griddle over medium heat and coat generously with butter.

Step 6

When the skillet is hot, cook the French toast in batches (do not overcrowd) until golden and crisp, about 2 to 3 minutes per side.

Step 7

Serve the French toast warm with maple syrup, powdered sugar, and berries, if desired! & Enjoy!
