Ingredients
3 cups milk
½ cup sweetened condense milk
1 cup granulated sugar
½ cup corn starch
4 egg yolks
2 - 3 tbs butter
1 tbs vanilla extract
3 - 4 bananas
8 oz whipped cream topping
11 oz nilla wafers
Directions
Step 1
Combine Dry Ingredients: In a medium saucepan, mix together sugar, & cornstarch.
Step 2
In a bowl mix together milk & evaporated milk.
Step 3
Add Milk: Gradually whisk in your milk with dry ingredients until smooth.
Step 4
Cook: Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and becomes bubbly.
Step 5
Simmer: Reduce the heat to low and continue cooking for an additional 2 minutes. Remove from heat.
Step 6
Temper the Eggs: In a small bowl, whisk together the 4 eggs yolks. Add a small amount of the hot pudding mixture to the eggs, stirring constantly to prevent the eggs from curdling.
Step 7
Combine Mixtures: Pour the egg mixture back into the saucepan with the hot pudding mixture. Return to heat and cook until it reaches a gentle boil, about 2 minutes.
Step 8
Add Vanilla: Remove from heat and stir in the butter and vanilla extract until smooth. Allow the mixture to cool for about 15 minutes, stirring occasionally.
Step 9
Layer: In a baking dish layer vanilla wafers. Pour half of the pudding mixture over the wafers & add a layers of bananas.
Step 10
Repeat the layers with wafers, bananas (optional), and pudding! Ending with a layer of pudding on top.
Step 11
Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Step 12
Just before serving, top with whipped cream or meringue if desired, & more vanilla wafers. Enjoy!!
