Ingredients
6 eggs
½ cup shredded cheddar cheese
½ cup milk
2 cups whole leaf fresh spinach
½ cup crumbled breakfast sausage
½ cup chopped thick cut bacon
Salt and pepper to taste
2 tbsp butter
Directions
Step 1
In a skillet, cook the crumbled breakfast sausage and chopped thick cut bacon until browned and crispy. Remove from the skillet and set aside.
Step 2
In the same skillet, add the fresh spinach and cook until wilted. Remove and set aside.
Step 3
In a bowl, whisk together the eggs, milk, salt, and pepper.
Step 4
Heat a non-stick skillet with butter over medium heat and pour in the egg mixture. Let it cook until the edges start to set, then gently lift the edges with a spatula to allow the uncooked eggs to flow underneath.
Step 5
Once the omelette is mostly set, sprinkle the shredded cheddar cheese over one half of the omelette. Add the cooked sausage, bacon, and wilted spinach on top of the cheese.
Step 6
Carefully fold the omelette in half over the fillings and cook for another minute or until the cheese is melted and the omelette is cooked through.
