Cheesy Taco Pasta

Ingredients

2 pounds ground beef

¼ cup diced peppers

2 tbsp butter

2 tbsp minced garlic

2 tbsp diced jalapeños

½ cup salsa

2 - 3 packets taco seasoning

1 cup beef/chicken broth or water

½ cup heavy cream

5 cups shredded cheeses: Monterey Jack, Sharp Cheddar and Mozzarella

1 box elbow macaroni or your favorite pasta

Sour cream and taco sauce to taste, cilantro for garnish

Directions

Step 1

Preheat oven to 350°. Boil pasta on high heat until al dente. Drain and set to the side.

Step 2

Using the same pot, add the butter and allow to melt on medium high heat. Add diced peppers and cook down for 3-5 minutes or until soft and translucent. Add the minced garlic and cook until You can smell garlic.

Step 3

Then add the ground beef and cook until no longer pink. Drain if there is excess grease. Add the beef back to the pot on medium heat and add the salsa and taco seasoning. Stir until well combined.

Step 4

Add the water and heavy cream and stir. Let it simmer on low medium heat for 5 minutes. Add 2 cups of the shredded cheeses and mix all the way together. Add your pasta to the bowl and mix all together.

Step 5

Lastly, add the diced jalapeños and give it one more good stir.

Step 6

In a nonstick deep dish pan, layer the mixture: pasta-cheese-pasta-cheese, leaving one more cup of cheese. The last layer should be some cheese. Cover the top in foil and place in the oven for 15-20 minutes.

Step 7

Take off the foil. Sprinkle on the rest of the cheese and return to oven. Turn the oven to broil on high. Broil for 1-2 minutes or until cheese is nice and melted on top.

Step 8

Serve hot with a dollop of sour cream and some taco sauce. Garnish with cilantro. Enjoy!
