Ingredients

2 eggs

125 gram sugar

9 g vanilla sugar

1 pinch salt

250 g Quark

250 g flour

1 ¾ tsp baking powder

1 cup sugar

Directions

Step 1

In a bowl add eggs sugar salt and vanilla sugar and beat with an electric whisk until pale and fluffy about 3 minutes then add Quark and mix to combine ( you can substitute greek yogurt if you can’t find quark)

Step 2

In another bowl mix the flour and baking powder with a whisk then use a sieve and soft it onto the wet ingredients. Mix with the mixer until just combined

Step 3

Use a ziplock bag or piping bag and cut 1/2 inch from the bottom roughly to make a hole wide enough for the blobs to squeeze out . Heat oil in a frying pan on medium heat until a pan chopstick/toothpick put in the oil starts to bubble then the oil is ready. Squeeze out blobs of dough then use a scissors to cut and drop them into the oil . Fry them and turn every now and again until it’s evenly golden all over .

Step 4

Drain the balls on paper towels then put sugar into a shallow dish and roll the balls in the sugar and enjoy !
