Ingredients

150 gram butter
200 mL coca cola

1 tsp expresso powder

¾ tsp baking soda

250 gram self-rising flour

¼ cup unsweetened cocoa powder

300 gram sugar

2 eggs

125 mL buttermilk

100 gram chocolate chips

125 gram butter
6 tbsp coca cola

1 tsp vanilla syrup

1 tsp vanilla

1 tbsp unsweetened cocoa powder

2 cup powdered sugar
½ cup ground hazelnuts
Directions
Step 1
Dice the butter and add to a saucepan with the coca cola and espresso powder and melt on medium high heat

Take the pan off the heat and stir in the baking soda and let it cool down

In a large bowl sift the flour sugar and cocoa powder

In another bowl whisk the eggs buttermilk and vanilla

125 mL buttermilk

1 tsp vanilla

Add all the liquids to the dry ingredients and mix them well then fold in the chocolate chips

100 gram chocolate chips

Bake 13-16 minutes in a 170 c fan oven

In a saucepan melt the butter and coca cola together on medium high heat

6 tbsp coca cola

Add the vanilla powdered sugar cocoa powder and ground hazelnuts and beat with an electric mixer until fluffy . If the mixture is stiff add 1/2 tsp of coca cola and loosen it up

1 tsp vanilla syrup

2 cup powdered sugar
½ cup ground hazelnuts

1 tbsp unsweetened cocoa powder

Put the frosting into a piping bag fitted with a star nozzle and pipe onto the cupcakes when they have cooled down . I like to decorate mine with cola bottle sweets afterwards
