Ingredients
400 gram chinese artichokes

1 tbsp salt

1 cup green peas

2 tsp lemon juice

3 tbsp butter

1 tbsp garlic

cup fresh parsley

tsp black pepper

1 L water

1 olive oil
Directions
Step 1
Wash and clean the artichokes and cut off any strings
Step 2
Blanch the artihokes in boiling salt water
Step 3
Place the artichokes into ice water
Step 4
In a pan fry Butter in olive oil then add the artichokes
Step 5
Add the garlic in and fry 2 minutes on medium heat then season with salt and pepper
Step 6
Toss in the peas and cook a further minute then squeeze lemon juice all over and garnish with fresh parsley
