Ingredients
2 chicken breast
4 slice cheddar cheese
2 slice cooked ham
1 pinch salt
1 pinch black pepper
¾ cup flour
1 cup panko bread crumbs
2 eggs
Directions
Step 1
On plastic wrap place the 2 boneless skinless chicken breasts and put more wrap on top then flatten with a mallet or rolling pin

Step 2
Season the breasts with salt and pepper then place ham in the centre and layer 2 slices of cheddar cheese on top ( Grated cheese works too)

Fold the sides of the breast over the middle of the cheese then roll tightly from the other side and twist both ends of the plastic wrap to keep the meat nice and firm then put in the fridge 30 minutes
Step 4
Get three plates or bowls ready one with flour one with breadcrumbs and one with 2 beaten eggs then season them all with salt and pepper

Heat oil to 325 f for frying ( if baking in the oven bake at 350 f 30-35 mins)
Step 6
dip the chicken in the flour then in the eggs then in the breadcrumbs and coat evenly then drop in the oil and fry about 6 minutes a side . Rotate to ensure an even golden color . Once cooked let rest 10 minutes before cutting
