Ingredients
1 vegan English muffin
Plant based sausage
⅓ cup of chickpea flour
⅓ cup spring water
½ tsp tumeric
Salt and pepper to taste
1 slice of Vegan cheese
Directions
Step 1
To a bowl at 1/3 cup chickpea flour, spring water, tumeric, salt, pepper and mix thoroughly.
Step 2
Lightly toast the English muffin in a pan on medium heat with a little butter.
Step 3
Add 1 tbs of avocado oil to pan on medium heat, pour in chickpea egg mix, sprinkle some spinach on top and cook for 2 mins on each side. Use a cup to cut a perfect circle out of the chickpea egg to add tonthe sandwich later.
Step 4
In the same pan cook your plant based sausage until golden brown on each side.
Step 5
Assemble sandwich with cheese, sausage, egg, strawberry jelly and enjoy!
