Ingredients

1 14 oz. can Hearts Of Palm

¼ cup vegan mayo

1 teaspoon fresh lemon juice

1 ½ teaspoons Dijon

¼ cup green onions sliced

2 tablespoons red bell pepper finely chopped

2 tablespoons green bell pepper finely chopped

½ teaspoon garlic powder

¼ teaspoon Kosher salt

¼ teaspoon freshly ground black pepper

1 tsp old bay

1 flax egg

½ cup plain dry breadcrumbs

1 tablespoon oil (I used avocado oil)

Tarter Sauce:

1 cup Mayonnaise

1 tablespoon Dill relish

¼ Red onion, finely diced

1 teaspoon Red wine vinegar

1 teaspoon Cajun seasoning

½ teaspoon Black pepper

½ tablespoon Sugar

1 teaspoon Dill weed seasoning

1 tbs Red Hot hot sauce

Directions

Step 1

Drain your hearts of palm then add to a bowl. Use your hands to break the hearts of palm into shreds. Then add red bell pepper, green bell pepper, green onions, vegan mayo, lemon juice, dijon mustard, flax egg, garlic powder, salt, black pepper, old bay, bread crumbs and mix thoroughly. Use your hands to form into 5-6 patties.

Step 2

Add enough avocado oil to a frying pan to pan fry. Fry the croquettes on medium low heat for 5 mins on each side.

Step 3

To make sauce add all ingredients to a bowl and mix thoroughly.

Step 4

Serve with rice and use tartar sauce to drizzle of croquettes.
