Ingredients

2 cups all purpose flour

1 cup coconut sugar

¾ cups coconut oil

¼ cup vegan yogurt

1 tsp vanilla extract

¼ tsp salt

½ tsp baking soda

1 ½ cups vegan chocolate chips

½ cup of gramcracker

Mini vegan marshmallows

Directions

Step 1

To mixing bowl add coconut oil, vegan yogurt, coconut sugar, vanilla extract and whisk thoroughly.

Step 2

To another mixing bowl add flour, salt, baking powder and whisk thoroughly.

Step 3

Pour your dry mix into your wet mix and fold in just until everything combines. Make sure not to over mix.

Step 4

Pour in vegan chocolate chips, crushed gramcrackers and fold in until everything is well combined. Chill in the fridge for 1 hour.

Step 5

Remove from fridge and use ice cream scooper to scoop 2-3 tbs of dough per cookie. Stuff the middle with 4-5 marshmallows, roll into a ball and place on a lined baking sheet. Bake at 375F for 13-16 mins.

Step 6

Let cool for 10 mins and enjoy!
