Ingredients

2 14 oz cans of full fat coconut milk

¾ cup agave

1 cup fresh mint leaves

1 tsp peppermint extract

1 tsp vanilla extract

⅛ tsp salt

Oreo cookies

Directions

Step 1

To a blender add coconut milk, mint leaves, agave, vanilla extract, peppermint extract, 1/8 tsp salt and blend for 2-3 minutes.

Step 2

Pour mixture into your container of choice.

Step 3

Crush up some Oreo cookies into small chunks. Sprinkle as many as you like into your ice cream mixture and mix. Cover with seran wrap and freeze over night.

Step 4

Once completely frozen, scoop some into a bowl or cone and enjoy!
