Vegan Ice Cream Cookie Sandwiches

Ingredients

1 ½ cup of unbleached flour

1 tsp baking powder

1 tsp baking soda

¼ tsp salt

1 cup coconut sugar

½ cup coconut oil

¼ cup almond milk

1 tsp vanilla extract

½ cup chocolate Chunks, roughly chopped

1 pint of vegan vanilla ice cream

¼ cup of mini chocolate chips for sides on icecream sandwich.

Directions

Step 1

To a mixing bowl add flour, baking powder, baking powder, and salt. Mix thoroughly then set aside.

Step 2

To another mixing bowl add coconut sugar, coconut oil, almond milk and vanilla extract. Mix thoroughly until everything is well incorporated.

Step 3

Pour your dry mix into your wet mix. Mix that together until it forms into a dough. Roughly chop the chocolate Chunks, add them into the bowl and fold them in until well incorporated.

Step 4

Use an ice cream scooper to scoop 6 cookie balls onto a lined baking sheet. Bake at either 350F for 9-11 mins or 375F for 9-11 mins. Baking at 350 will produce cookies lighter in color and baking at 375F will produce cookies that are darker. Let cookies cool completely for 15-20 mins.

Step 5

Freeze the cookies for 20 mins. Remove from freezer. Place 3 cookies face down, add as much ice cream as you like on each cookie then place the other 3 cookies on top. Sprinkle mini chocolate chips onto the side of the Sandwiches and enjoy!
