Ingredients
2 slices of vegan bread

⅓ cup chickpea flour
⅓ cup spring water
¼ cup nondairy milk (I used homemade hemp milk)
½ tsp cinnamon
pinch of salt
½ tsp vanilla extract
Powdered sugar
Maple syrup
1 - 2 tbs Olive oil
1 tbs vegan butter
Chickpea egg:
½ cup chickpea flour
½ cup spring water
¼ tsp tumeric powder
¼ tsp salt
Black pepper
Diced red onion
Diced red bell pepper
Finely chopped spinach
Directions
Step 1
To a shallow bowl add chickpea flour, spring water, non dairy milk, pinch of salt, cinnamon, vanilla extract and mix thoroughly.

Add vegan butter to a nonstick pan on medium heat. Dredge bread in French Toast mix on both sides and add to nonstick pan. Cook until golden brown on each side.

Cook impossible sausage in pan on medium heat in olive oil until brown in crispy on each side.

To a small bowl add chickpea flour, spring water, tumeric, salt, black pepper and mix thoroughly. Add olive oil to non stick pan on medium heat. Pour in chickpea egg mix, add red onions, red bell peppers, spinach and cook until golden brown on each side. Make sure to fold it in half so it will fit on your sandwich.

Step 5
Add your French Toast to a plate and Sprinkle with powdered sugar. Add sausage, chickpea egg and drizzle with maple syrup.
