Ingredients
8 roma tomatoes, halved
1 garlic bulb
1 yellow or red onion
1 cup vegetable broth
½ cup coconut milk
1 tbs tomatoe paste
4 - 6 basal leaves
1 tbs olive oil
Salt
Black pepper
2 tsp crushed red pepper
1 tsp Italian seasoning
1 tsp garlic & Herb seasoning
1 tsp Pharm To Soul seasoning by @Kendospice
Directions
Step 1
Half your tomatoes and cut your onions into small chunks. Separate the garlic and remove the out layer of each.
Step 2
Add tomatoes, onions and garlic to a lined baking sheet. Drizzle with olive oil and Season to taste with salt & pepper. Bake at 400F for 45 minutes.
Step 3
Transfer your roasted tomatoes, onions & garlic to a blender. Add fresh basil, tomato paste, vegetable stock and blend until smooth.
Step 4
Transfer mixture to a large pot on medium heat. Pour in coconut milk and Season to taste with garlic & Herb seasoning, crushed red pepper, Italian seasoning, pharm to soul, salt, black pepper. Mix thoroughly and simmer for 5 minutes.
Step 5
Garnish with freshly chopped basil, Drizzle with a little more coconut milk and enjoy!
