Ingredients
1 ⅓ cup whole wheat unbleached flour
2 tbs coconut sugar
2 tbs corn starch
1 tbs baking powder
½ tsp salt
1 ⅓ Dairy free milk
2 tbs melted vegan butter
1 tsp vanilla extract
⅔ cup vegan chocolate chips
Vegan butter or oil spray
Maple syrup
Directions
Step 1
To a bowl add flour, coconut sugar, corn starch, baking powder, salt and whisk thoroughly. Then add non-dairy milk, melted vegan butter, vanilla extract and mix thoroughly. Mix in the chocolate chips and let rest for 10 mins.
Step 2
Oil a nonstick pan on medium low heat. Pour 1/3 cup a pancake batter and cook for 2 mins on each side.
Step 3
Drizzle with maple syrup and enjoy!
