Ingredients
1 ½ cups all purpose flour
2 tbs coconut sugar
2 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
½ tsp salt
¾ cup plant milk
3 tbs vegan butter, melted
2 flax eggs ( 2 tbs flax meal + 4 tbs water)
2 large Apples, peeled and diced
2 tbs lemon juice
Avocado oil for frying
Icing:
1 cup powdered sugar
3 tbs plantmilk
Directions
Step 1
Peel and dice 2 large apples. squeeze lemon juice over apples and mix thoroughly to prevent them from turning brown.
Step 2
To a mixing bowl add vegan butter, plant milk, flax eggs and whisk thoroughly.
Step 3
To another mixing bowl at flour, coconut sugar, baking powder, salt, cinnamon, nutmeg and whisk thoroughly.
Step 4
Pour the wet mix into the dry mix and mix until completely combined. Then fold in your apples and chill in the fridge for 15 mins.
Step 5
Heat avocado oil up to 350F and drop a heaping table spoon of batter for each fritter into the hot oil. Fry until golden brown on each side. let cool for 10 mins before adding icing.
Step 6
Make the icing by adding powdered sugar and plant milk to a bowl and whisk until the icing reaches the consistency of your liking.
Step 7
Drizzle the icing over each fritter and enjoy!
