Ingredients
1 large sweet potato
1 ⅓ cup whole wheat flour
2 tbs nutritional yeast
½ tsp salt
Sauce:
1 15oz can of tomato sauce
½ cup of vegan half & half or coconut milk
2 tbs vegan parmesan cheese
2 tsp minced garlic
1 tbs avocado oil
Season to taste with salt and pepper.
Directions
Step 1
Clean sweet potato thoroughly and dry off with paper towel. Poke a few holes in the sweet potato and put in microwave for 10 mins.
Step 2
Scoop the inside of the sweet potato into a mixing bowl and mash it thoroughly. Add in 2 tbs of nutritional yeast, 1/2 tsp salt and mix thoroughly. Add in 1 1/3 cups of flour and mix until it forms into a dough. Kneed it a little inside of the bowl. Make sure not to over kneed because you don't want it to be too sticky.
Step 3
Lightly flour a clean surface, add your dough and for it into a uniform ball. Divide into 4 even pieces. Roll each out into a small rope and cut your gnocchi into the size and shape of your choosing.
Step 4
Bring large pot of salted water to a boil and cook your gnocchi until they start to float and remove from pot.
Step 5
Add oil to pan on medium heat. Add in minced garlic and Saute until fragrant. Pour in tomato sauce and bring to a simmer. Add in half & half, salt and pepper to taste and mix thoroughly. Mix in your gnocchi, add in 2 tbs of vegan parmesan cheese and mix thoroughly.
Step 6
Add to plate, top with extra vegan parmesan cheese, fresh parsley and enjoy!
