Ingredients
2 tbsp olive oil
1 medium yellow onion
1 medium bell pepper
4 stalks celery
4 cloves garlic
1 lb dry red beans (Soaked overnight)
6 cups vegetable broth
1 tsp thyme
1 tsp oregano
1 whole bay leaf
½ tbsp smoked paprika
10 - 15 Freshly cracked pepper (about cranks)
pinch cayenne pepper
Directions
Step 1
Dice the onion, bell pepper and celery.
Step 2
Add olive oil to a soup pot, add your veggies and sauce for 10 mins. Season with salt and pepper.
Step 3
Add garlic, kidney beans, vegetable broth, thyme, oregano, bay leaf, smoked paprika, black pepper, cayenne pepper and give it a good mix. Bring to a boil, cover and reduce to simmer for 2 hrs. Then uncover, smash some of the beans to the side of the pot then cover and simmer for 30 mins.
Step 4
Serve over brown rice and garnish with green onions.
