Ingredients
2 Vegan pie crust
2 large Apples, peeled and diced
2 tbs vegan butter
¼ Coconut sugar
1 tbs lemon juice
1 tsp vanilla
¼ tsp cinnamon
¼ tsp All Spice
¼ tsp nutmeg
Vegan Egg wash:
2 tbs plant milk
1 tbs maple syrup
Spiced Sugar:
¼ cup coconut sugar
¼ tsp cinnamon
¼ tsp All Spice
¼ tsp nutmeg
¼ tsp pumpkin spice

Step 1
Peel and diced 2 large apples
Step 2
Make vegan egg wash by adding all ingredients into a small bowl and mixing thoroughly.

Melt 2 tbs of vegan butter in a pan on medium heat. Add in diced apples, sugar, cinnamon, all spice, nutmeg, vanilla extract, lemon juice and mix until combined. Cook while stirring occasionally until apples are tender. (About 15 mins) Let cool completely.
Step 4
Roll out vegan pie crust on a lightly floured surface. Use a cookie cutters to cut out as many pumpkin shapes as you desire. Add half of them to a parchment paper lined cook sheet. Add 1 tbs of the apples tonthe center of each pumpkin, brush the sides with the vegan egg wash, place another pumpkin on the tops of each and seal the sides with a fork. Slice an x in the middle of each and chill in the fridge for 15 mins.
Step 5
Make the priced sugar by combining all ingredients into a small bowl and mix thoroughly.
Spiced Sugar:
¼ cup coconut sugar
¼ tsp cinnamon
¼ tsp nutmeg
¼ tsp All Spice
¼ tsp pumpkin spice

Remove from fridge and brush each mini pie with the vegan egg wash, sprinkle with the Spiced Sugar and bake at 400F for 15 mins.
Step 7
Let cool for 10 mins and enjoy!
