Ingredients
9 oz Vegan Tortellini
3 - 5 cloves garlic, minced
2 tbsp vegan butter
½ cup vegan half & half
½ cup of pasta water
1 - 2 tsp Italian seasoning
½ cup of vegan parmesan
Salt and pepper to taste
Directions
Step 1
Mince 3-5 cloves of garlic.
Step 2
Cook Tortellini as directed on packaging and set aside 1/2 cup of the pasta water.
Step 3
Add 2 tbs vegan butter to a skillet on medium heat. Add in minced garlic and Saute until fragrant. Add in half & half, Italian seasoning, pasta water and mix thoroughly. Cook on medium low heat until it starts to thicken. Add in 1/2 cup vegan parmesan. Mix until it's velvety and creamy and. Season to taste with salt and pepper. Add in Tortellini and toss into evenly coated.
Step 4
Add to plate, top with crushed red pepper, fresh parsley, more vegan parmesan and enjoy!
