Ingredients

32 oz dried Black eyed Peas

1 red onion, diced

2 red bell peppers, diced

4 stalks Celery, diced

12 cups vegetable broth

2 tbs cumin

4 tsp smoked paprika

Garlic powder (to taste)

Onion powder (to taste)

Pink Himalayan salt (to taste)

Black pepper (to taste)

2 tsp thyme

2 bay leaves

Directions

Step 1

Soak dried Black-Eyed peas in water overnight. Drain & rinse thoroughly.

Step 2

Dice red onion, red bell peppers & celery.

Step 3

Add avocado oil to a large pot on medium heat. Pour in the onions, bell peppers and celery. Season with salt, black pepper, smoked paprika and cumin. Mix thoroughly and cook until softened.

Step 4

Pour in your black-eyed peas, vegetable stock, minced garlic, smoked paprika, cumin, thyme and mix thoroughly. Add 2 bay leaves and simmer covered for 2 hours. Make sure to stir periodically.

Step 5

Serve and enjoy!
