Japanese Curry Orzo Risotto with Beef and Mushrooms

I love a good Asian fusion dish like this where Japanese curry meets Italian risotto! I mean who wouldn't? The savoury flavours of curry is made extra creamy and dreamy with a touch of Italy with parmesan cheese and butter. You're welcome to sub beef and mushroom with other protein and vegetable of choice but they sure add a nice flavour and texture to this dish so I recommend you try with them first before venturing out!

Ingredients

1 cup orzo

200 g lean beef

1 shallot

8 cremini mushrooms

3 tbsp butter

2 block Japanese curry

1/3C mirin

1 tbsp chopped parsley

1 ½ cup water

1/3C grated parmesan cheese

salt and pepper

Directions

Step 1

Slice the shallot and mushrooms and finely chop the parsley.

Step 2

In a large pan, melt some butter on medium heat and sweat out the shallot before adding in the beef. Season with salt and pepper and cook until the redness disappears before adding in the mushrooms.

200 g lean beef

Step 3

Once mushrooms are slightly softened, add in the orzo, mix all the ingredients together and pour in the mirin. Let it deglaze the pan and reduce to about 50%.

Step 4

Add in the water and curry blocks and bring it to boil while constantly stirring. Then bring it down to simmer and cook for about 10 minutes until orzo cooks to aldente.

Step 5

To finish, mix in parmesan cheese and butter and serve hot with more parmesan and parsley on top. Enjoy!
