Ingredients

1 cup orzo

200 g lean beef

1 shallot

8 cremini mushrooms

3 tbsp butter

2 block Japanese curry

1/3C mirin

1 tbsp chopped parsley

1 ½ cup water

1/3C grated parmesan cheese

salt and pepper
Directions
Step 1
Slice the shallot and mushrooms and finely chop the parsley.

In a large pan, melt some butter on medium heat and sweat out the shallot before adding in the beef. Season with salt and pepper and cook until the redness disappears before adding in the mushrooms.

Once mushrooms are slightly softened, add in the orzo, mix all the ingredients together and pour in the mirin. Let it deglaze the pan and reduce to about 50%.

Add in the water and curry blocks and bring it to boil while constantly stirring. Then bring it down to simmer and cook for about 10 minutes until orzo cooks to aldente.

To finish, mix in parmesan cheese and butter and serve hot with more parmesan and parsley on top. Enjoy!
