For the Matcha French Toast

4 Up to thick slices brioche bread

2 eggs

40 g white sugar

½ tsp vanilla extract

¼ tsp cinnamon

A pinch of salt

150 g milk of choice or half and half

3 g matcha powder

Butter for cooking

Maple syrup

Whipped mascarpone cheese

More matcha for dusting

For the Matcha Einspanner

4 g matcha powder

4 g sweetener

30 ml hot water

40 g heavy cream

10 g icing sugar

90 ml milk of choice

Step 1

For the Matcha French Toast

Step 1

Whisk eggs, white sugar, vanilla extract, cinnamon, salt, milk of choice or half and half, and matcha powder until combined.

¼ tsp cinnamon

A pinch of salt

150 g milk of choice or half and half

3 g matcha powder

Step 2

Soak the brioche bread up until 30 minutes.

Pan fry in butter on medium-low heat until golden brown.

Serve with maple syrup, whipped mascarpone cheese, and dust with more matcha.

For the Matcha Einspanner

Step 1

Whisk matcha powder, sweetener, and hot water until smooth.

4 g matcha powder

4 g sweetener

30 ml hot water

Step 2

Blend heavy cream and icing sugar until fluffy.

40 g heavy cream

10 g icing sugar

Step 3

In a glass, add milk of choice and ice, then pour the matcha mixture over it.

90 ml milk of choice

Ice

Step 4

Top with the whipped cream mixture.
