Ingredients
1 ½ cup penne pasta
2 tablespoons olive oil
1 tablespoons butter
½ tsp. red chili flakes
3 cloves garlic, minced
1 onion, chopped
1 cup tomato paste
¼ cup vodka
1 cup heavy cream
kosher salt
ground pepper
½ tablespoon Cajun seasoning
Fresh basil or parsley for garnish
Directions
Step 1
Cook the penne pasta according to package instructions until al dente.

In a large skillet, heat the olive oil and butter over medium low heat.

Add onions, minced garlic, red chili flakes and sauté until fragrant.

Pour in the vodka and let it simmer for about 15 minutes on low heat.

Add tomato paste to the skillet and cook for about 10 minutes.

Stir in the heavy cream, salt, pepper, and cajun seasoning . Cook for another 2-3 minutes.

Add the cooked penne pasta to the skillet and toss until well coated with the sauce.

Add 1/4 cup of pasta water. Let the pasta simmer and add Parmesan cheese.
