Ingredients

Ingredients:

2 lb. ground beef

1 onion, diced

1 bell pepper, optional

2 cloves of garlic, minced

1 teaspoons tomato paste

2 can diced tomatoes

1 can kidney beans, drained

1 can black beans, drained

1 can corn, drained

2 packet taco seasoning

32 oz beef broth

1 tablespoon vegetable bouillon base

Salt; to taste

Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro

Directions

Step 1

In a large pot, brown the ground beef over medium heat. Drain any excess fat.

Step 2

Add the diced onion, bell pepper, and minced garlic to the pot. Cook until the vegetables are tender.

Add tomato paste and stir for about 2-3 minutes.

Step 4

Stir in the diced tomatoes, black beans, corn, and one taco seasoning packet. Mix well.

Step 5

Pour in the broth and add remaining taco seasoning. Bring the soup to a boil. Reduce the heat and simmer for about 15-20 minutes.

Add vegetable bouillon base and let simmer for 5 more minutes.

6.Serve the taco soup hot and garnish with your favorite toppings.
