Spicy Vodka Gnocchi

I've yet to meet a soul that doesn't love this spicy vodka sauce! Not only is this version with gnocchi sure to impress, but it also includes a bunch of pantry ingredients you probably already have on hand.

Ingredients

500 grams gnocchi, uncooked

2 tbsp olive oil

2 cloves garlic, minced

1 shallot, diced

2 tbsp tomato paste

1 tsp red pepper flakes, plus more for serving

¼ cup vodka

½ cup heavy cream

½ cup parmesan cheese, grated, plus more for serving

Salt & pepper, to taste

Directions

Step 1

Cook gnocchi according to the directions on the package. Reserve 1/2 cup of the starchy pasta water.

Step 2

Meanwhile heat olive oil on a large skillet over medium. Add garlic, shallot, tomato paste, and red pepper flakes. Stir until the shallot starts to soften (about 3 minutes).

Step 3

Add vodka and stir frequently until it has mostly evaporated.

Step 4

Add cream and parmesan cheese. Stir until the cheese has melted and the sauce is thick. Season with salt and pepper to your taste.

Step 5

Add the cooked gnocchi to the sauce and toss to combine. If the sauce gets too thick, add a small amount of the reserved pasta water to loosen things up.

Step 6

Serve immediately with red pepper flakes and parmesan cheese sprinkled on top. Enjoy!
