Ingredients
Chicken Bites
450 grams boneless skinless chicken breasts (about 2), cut into one inch cubes
Kosher salt and pepper, to taste
1 cup all purpose flour
4 cups panko breadcrumbs
2 eggs
1 tbsp garlic powder
Nonstick spray, or oil in a spritzer bottle
Garlic Parmesan Sauce
½ cup salted butter, melted
4 cloves garlic, grated
2 tbsp parsley, chopped
1 tbsp lemon juice
¼ tsp red pepper flakes
¼ tsp black pepper
1 cup parmesan cheese, grated
Directions
Chicken Bites
Step 1
Preheat your air fryer to 390F.
Step 2
Season the chicken cubes with a generous amount of salt and pepper.
Step 3
Add the flour and panko bread crumbs each to a separate plate or shallow bowl. Crack the eggs into a separate bowl and beat them.
Step 4
Add the garlic powder to the breadcrumbs and stir to combine.
Step 5
It's time to bread your chicken! Coat each bite in the flour, then the eggs, then the breadcrumbs. Shake off the excess after each step!
Step 6
Place the chicken bites in your air fryer and make sure they aren't touching. Give the bites a light spritz of oil and air-fry for 10-12 minutes (or until they reach an internal temperature of 165F), flipping once halfway through cooking. If you have a smaller air fryer, you might have to cook the bites in separate batches. Place the bites waiting to be cooked in the fridge.
Step 7
Add the chicken bites to a bowl and toss them with the garlic butter and parmesan. Enjoy!
Garlic Parmesan Sauce
Step 1
In a small bowl combine the butter, garlic, parsely, lemon juice, red pepper flakes, a black pepper.
Step 2
Pour the garlic butter over the chicken bites and toss to coat.
Step 3
Sprinkle the parmesan cheese over the chicken bites and toss them again until all the bites are coated. Serve and enjoy!
