Garlic Butter Shrimp Spaghetti

After spending a week in Costa Rica (where I swear I ate my weight in shrimp & other delicious seafood), I decided to keep the shrimp train moving with this yummy spaghetti!

Ingredients

200 g spaghetti

½ cup butter

200 g shrimp, peeled and deveined

3 cloves garlic, minced

½ tsp red pepper flakes (optional)

½ cup pecorino romano, grated

¼ cup fresh parsley, chopped

3 tbsp lemon juice

Salt and pepper, to taste

Extra pecorino romano for serving

Directions

Step 1

Cook pasta according to package directions. Reserve about 1/2 cup of the starchy cooking water.

Step 2

Meanwhile, heat butter on medium and add shrimp, garlic, and chili flakes. Cook shrimp for 1-2 minutes per side, or until pink throughout.

Step 3

Add the cooked pasta, pecorino romano, & reserved pasta water. Toss gently until the cheese has melted and the sauce is thick.

Step 4

Turn off the heat and add parsley & lemon juice. Stir to coat pasta in the sauce. Add salt & pepper if needed.

Step 5

Serve with more cheese on top. Enjoy!
