Ingredients

For the Baked Sweet Potato

2 - 3 sweet potatoes peeled and roughly chopped

2 tbsp olive oil

2 - 3 tbsp Latin spices

Salt to taste

For the Chipotle Mayo

300 ml neutral oil

1 - 2 tbsp chipotles in adobo

1 whole egg

2 tbsp lime juice

Salt to taste

For the Serving

Grains (brown or white rice / quinoa or a combination)

can black beans drained and seasoned

can corn kernels drained

Cherry tomatoes

Avocado pieces

Coriander leaves

Directions

Step 1

For the Baked Sweet Potato

Step 1

Preheat oven to 200C, in a bowl add the sweet potato, oil, spices and salt, toss and lay in a lined baking tray, bake for 20-25 min until fork tender.

Step 2

For the Chipotle Mayo

Step 1

In a tall canister add the oil, chipotles, carefully crack the egg and let it sit at the bottom of the canister, season with salt and lime juice, blend with a stick blender until emulsion forms.

Step 2

For the Serving

Step 1

Place the grains in a bowl, and top with all the veggies, baked sweet potato, garnish with coriander leaves and drizzle with chipotle mayo.
