Ingredients

2 racks of pork ribs

1 lime

Salt flakes

3 tbsp jerk spice rub

1 cup apple cider vinegar

½ orange, juiced

1 cup water

1 cup jerk BBQ sauce

½ Extra cup jerk BBQ sauce for glazing

Finely chopped parsley
Directions
Step 1
Remove the membrane from the back of the ribs, season with lime, salt, and the jerk spice rub. Let marinate for at least 30 minutes (can marinate overnight).
Step 2
Set up the Instant Rio Multi-Cooker with a steamer basket.
Step 3
Add the apple cider vinegar, orange juice, water, and Jerk BBQ sauce.
Step 4
Place the pork rib racks in the Instant Pot, close the lid, and set to high pressure, meat setting, or 25 minutes.
Step 5
Once the Instant Pot is done, release the pressure and transfer the pork ribs to a lined tray. Brush with the remaining Jerk BBQ sauce.
Step 6
Grill in the oven at 200°C for 5-8 minutes until it starts caramelising.
Step 7
Serve sprinkled with parsley and additional BBQ sauce on the side.
