If you love millionaire's bacon, you will love my personal spin on it featuring slabs of pork belly––yum! For those unfamiliar with millionaire's bacon, here's why you'll love it: it's savory & sweet candied bacon that typically packs a bit of heat. It's simple to whip up & only requires a handful of ingredients. From my knowledge, its popularity arose at Sweet Maple in San Francisco by way of Chef Hoyul Steven Choi. He & his partner, Chaiporn Kitsadaviseksak, added it to their menu & the rest is history. You can now find hundreds of recipes for millionaire's bacon. Most include the same baseline of ingredients: cayenne pepper, black pepper, brown sugar and/or maple syrup. For a bit of flair, you'll find some unique additions in mine like sichuan & aleppo pepper. Feel free to omit if you don't have either on hand but I think they add a new depth of flavor (& the colors of both are lovely). In using pork belly, the dish becomes more substantial –– you get an appetizer of sorts; I thoroughly enjoyed serving it in a lettuce wrap but I could also see it being served as a main protein over rice or in a sandwich.

Ingredients

1 ½ - 2 lb skinless pork belly strips (~2 in thickness)

¾ c packed light brown sugar

1 tbsp black pepper, coarsely ground

½ tbsp crushed red pepper flakes

2 tsp ground sichuan peppercorns

1 tbsp aleppo pepper flakes

2 tsp smoked paprika

¼ tsp ground ginger

½ tsp cayenne pepper

½ tsp salt

Directions

Step 1

Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper & top with a wire rack. Set aside.

Step 2

Combine all of the spices in a bowl. Lightly drizzle the pork belly strips with oil, coating all of the sides. Season with the spice mixture ensuring that the strips are fully coated. Cook for 20 minutes per side or until the internal temperature reaches 145ºF.

Step 3

The strips should be well-browned. If desired, broil or torch immediately before serving.
