This is something you can spend 15-20 minutes making earlier in the morning and then place into the fridge until you’re ready to make them later in the day. An awesome high protein meal for anyone who wants a healthy quick dinner for their family.

Ingredients

Broccoli Cheddar

1 lb chicken breast

1 cup broccoli, diced small

2 cloves garlic

¼ cup cheddar cheese

½ tsp thyme

½ tsp salt

Mozzarella Basil

1 lb chicken breast

½ cup tomatoes, diced fine

2 tbsp basil, diced fine

4 - 6 ounces fresh mozzarella

4 cloves garlic

½ tsp oregano

1 tbsp salt

Directions

Broccoli Cheddar

Step 1

Pound chicken breasts as thin as possible without turning it into ground meat. I use a rolling, with the breast in a gallon zip-loc bag, and it works perfectly

Step 2

Lay pounder chicken breast on a large piece of press’n seal or Saran Wrap. Top with desired ingredients and proceed to roll tightly. Seal at the ends and ensure wrap helps hold the seal tightly.

Step 3

Repeat step 2 for as many breasts as you need to roll up.

Step 4

If making ahead of time place into fridge until you will cook them.

Step 5

Pour olive oil into a large frying pan. Heat over medium and gently place chicken rollups into pan seam side down. Let them cook about 10 minutes, or until golden brown, before flipping over. Cook for another 7-10 minutes.

Step 6

If making Parmesan chicken, top with marinara sauce and freshly grated Parmesan. Place into the oven under the broiler for 5 minutes, taking care not to burn.

Step 7

Remove from oven, allow to cool for a few minutes. Enjoy!
