32 Large ( oz) mason jar

Kitchen scale (optional)

Flour

Water

Directions

Step 1

DAY 1 — Feed with 50 grams flour and 50 grams water. Stir to combine.

Step 2

DAY 2 — Feed with 50 more grams flour and 50 grams water. Stir to combine.

Step 3

DAY 3 — Discard 100 grams of your starter — Feed with 100 grams flour and 100 grams water. Stir to combine. NOTE: You should start seeing some bubbles form by now. It is ever more important you don’t screw the lid too tight—just tight enough to keep out contaminants.

Step 4

DAY 4 — Discard 150 grams starter. Feed with 100 grams flour and 100 grams water. Stir to combine.

Step 5

DAY 5 — Discard 200 grams starter. Feed with 150 grams flour and 150 grams water. Stir to combine. NOTE: You will need a larger vessel by day 4 or 5. I found my 9-10 cup vessel at Target for about $12.

Step 6

DAY 6 — Discard 250 grams starter. Feed with 200 grams flour and 200 grams water. Stir to combine.

Step 7
