I most often prefer to eat my hamburgers without a bun, because it's hard to justify the added calories of the bun, but dang it...a juicy hamburger with a delicious bun is hard to beat, and these buns are perfect!

Ingredients

120 grams sourdough starter, active and bubbly (1/2 cup)

175 grams cup warm water (3/4 cup)

425 grams all purpose flour (3 cups)

60 grams melted coconut oil or butter (1/4 cup)

60 grams honey (3 tbsp)

10 grams sea salt (1 tsp)

1 egg

Egg wash—optional step...

1 egg yolk

1 tablespoon water

sesame seeds

Directions

Step 1

Add sourdough starter, warm water, all purpose flour, melted butter or coconut oil, honey, salt and egg. Knead for 5-10 minutes with dough hook, or by hands, until smooth & elastic.

Step 2

Place dough in a greased bowl and cover with a damp towel or plastic wrap for 8 hours. You can also speed that time up by placing it into the oven with the oven light on (turn off after an hour). Time will vary, but definitely less than 8 hours..

Step 3

Once the dough has doubled in size, divide the dough into 8 equal pieces.

Step 4

Shape the buns by flattening slightly then tucking the 4 corners underneath and pinching to hold. I also like to create a little tension by rotating each bun beneath my hands on a very lightly floured surface.

Step 5

Cover the buns with plastic wrap or a damp tea towel and allow to rise until doubled in size.

Step 6

Beat the egg yolk and water and brush the tops of the buns with the mixture.

Step 7

Sprinkle with sesame seeds. (optional)

Step 8

Bake the buns for 25-30 minutes at 350 degrees. You want them to be golden on top.
